Ingredients

  • 1 lb 450 g ground beef or ground turkey
  • 2 tbsp 2 tbsp butter
  • 1 lb 450 g green cabbage, shredded
  • 6 cups 1.4 liters water
  • 2 tbsp 2 tbsp Dijon mustard
  • 2 tbsp 2 tbsp tomato paste
  • 2 2 bay leafbay leaves
  • 2 2 meat bouillon cube, crumbledmeat bouillon cubes, crumbled
  • 1 tbsp 1 tbsp tamari soy sauce
  • 1 (3 oz.) 1 (90 g) leek, finely choppedleeks, finely chopped
  • salt and ground black pepper

Serving

  • 1 cup 240 ml sour cream
  • 4 tbsp 4 tbsp fresh parsley, finely chopped

Making low carb simple

Instructions

  1. Brown the meat in a large pot. Add shredded cabbage and keep frying until the cabbage has softened and got a nice color.

  2. Add water, mustard, tomato paste, bay leaves, bouillon and soy sauce. Bring to a boil and simmer on medium-high heat for 15-20 minutes.

  3. Add the leek to the soup just a few minutes before serving. Season with salt and pepper.

  4. Serve with finely chopped parsley and a dollop of sour cream.

    They are a stock base you can find in most supermarkets near the boxed or canned broth.

    The meat boullion really makes or breaks a soup. Not having any home made beef broth at home, I got some from the store. So, the soup is just so-so. Nothing distinguishable in terms of flavor.

    You can use either. Some are more readily available in different locations. Since this recipe has beef, beef boullion would work well.

    This is very good! I really like the tangyness from the dijion mustard. It's so easy to make too! To add some color, I used red cabbage instead of green.
    It turned the broth a lovely color too. Overalll a great soup for a winter day.

    So adding the leek just before serving, the leek is not cooked it's just stirred into hot soup?

    Yes, the nutritional information listed is per serving. If you make the default of 4 servings, you would divide the amount into 4 equal amounts as best possible.

    One of the favorite soups in our house. Even the ones who don't like cabbage eat this. I use a carton of beef broth from the store as I usually don't make beef bone broth (I don't like the taste), but even using the bouillon cubes, the flavor is very good. I myself didn't think the bouillon cubes detracted from the flavor overmuch; don't be afraid to use them.
